Potato-Carrot Puree

Mashed potatoes are just so boring, like listening to Coldplay. Dress them up with carrots, cream and nutmeg. They will taste, and look, far better.

Ingredients

  • 1 pound baking potatoes, peeled and chopped
  • ¾ pound carrots, peeled and chopped
  • 3 tablespoons butter
  • ½ cup cream or half and half
  • ½ teaspoon nutmeg
  • Sea salt and pepper

Preparation

  1. Bring a pot of salted water to a boil.
  2. Add potatoes and carrots and boil for 30 minutes.
  3. Drain and mash or transfer to a blender or food processor. Add butter, cream and nutmeg and puree.
  4. Season with salt and pepper and serve.
